Balsamic Chicken and Chorizo Salad

Before I went skiing on Sunday I wanted a yummy healthy vitamin filled meal before I embarked on a carb fest in the Austrian Alps. I also had to empty the fridge so this was a bit of a chuck it together and see what happens sort of salad.




I had some chorizo and mozzarella left from the aubergine dish, avocado from the sweetcorn fritters and chicken from a stir fry I made mid week.

I simply sliced up the chicken and put in a pan with some balsamic, once it started to caramelise, I added in the sliced chorizo. Once cooked I then topped on to a plate with some kitchen paper to soak up the excess fat.


Slice up your tomatoes and avocado and arrange on a plate.



My love for chorizo and avocado seems to go from strength to strength and this cheeky little salad wins again.

Tear and share your mozzarella and drizzle over some balsamic glaze, a drizzle of extra virgin olive oil and a sprinkle of salt.

This is the sort of salad that you can throw together with lots of things but this combination sort of won me over.

This would also be a cracking tupperware lunch to take to work.
