Sweet Sweet Fritters

I am not really sure where the inspiration for this dish came from. I first made it about two years ago for a simple supper after work and haven't looked back. It really doesn't take long to make and is so satisfyingly yummy. I like to serve it with lots of lovely buttery soft avocado and salty streaky bacon.

Salty bacon, yummy sweetcorn pancakes and deliciously creamy avocado make this dish a great flavour and texture combination. I also made a lemony courgette salad, this stuff is the shiz, a lovely fresh salad which helps break up the plate. It tastes so good you start to wonder how it can also be really good for you. Top this dish off with a dollop of paprika spiked sour cream and you are on to a winner.

Too feed 4 hungry people you will need.

150g plain flour
1.5tsp baking powder
1.5tsp paprika
3 eggs
75ml milk
500g tin of sweetcorn
Salt/ Pepper

1 avocado
12 rashers of smokey streaky bacon
Small tub sour cream
Dash paprika
1 courgette
Juice half lemon
Toasted pine nuts
Sprinkle of Maldon Salt

In a bowl put your dry ingredients in and mix.

Meanwhile in a jug add your eggs and milk and give it a good beat until you have a well mixed mixture.

Slowly pour your wet mix into the dry mix and whisk until you have a smooth batter.

Add your sweetcorn and leave to rest for a few mins.

Whilst your batter is resting, slice up your avocado and start to gently fry your bacon. You want a crispy, crunchy pile of bacon.

Coarsely grate your courgette and in a bowl squeeze over your lemon. Toss in the pine nuts and season. You are now good to go.

Pile up your plate and enjoy.
