:: Chimichurri Steak Wednesday ::

A couple of weeks ago, some friends and I went for a steak night and I was introduced to an ermaaazing flavour explosion in my mouth..... Ladies and Gentlemen, I introduce you to *Chimichurri*, My new favourite steak sauce. This beautiful, zingy, fresh, green Argentinean sauce brings alive summer. I can give or take peppercorn sauce and béarnaise but give me a vibrant bowl of this zingy sauce and I am yours.

The sauce brings alive the rare grass fed sirloin. Served with a simple salad, it's my new favourite healthy summer dish.

This dish takes approx. 20 minutes from start to plate. It so simple you have to ask yourself if you are missing something. I quickly browsed the web for a recipe and merged a BBC Good Food and The Londoner recipe to come up with mine.

For two people you will need:

:: 2 grass fed organic sirloins
:: bunch of parsley
:: handful of oregano
:: 2 tbsp white wine vinegar
:: 2 garlic cloves
:: 1/2 tsp chilli flakes
:: a really good glug of olive oil
:: salad

// In a magimix, blitz up your parsley, oregano and garlic until finely chopped.

// pour in your olive oil, vinegar, salt, pepper and chilli flakes and continue to blitz until you have a vivid green sauce.

// Whilst your sauce is blitzing away pop your steaks onto a hot griddle pan and cook to your liking ( I like mine rare verging on blue).

// Rest your steak and make your salad.

// Slice up and drizzle the chimichurri. Yums.

:: Butternut Squash and Puy Lentil Salad ::

Yesterday I spent the morning sitting on my friend's roof terrace, blogging in the sun. It was so warm and sunny that I maaaaaay have got slightly burnt, goddamn my English rose complexion and complete lack of being able to get any form of a tan. 

Being out in the sun, drinking coffee, gossiping, got me so excited for summer.

There is something so special about Spring/ Summer that brings people together. Impromptu bbq's, lunch parties, picnics, they all bring smiles and happiness.

I also love salad, What is better than giant bowls of salads sitting in the window of a deli, cheekily waving at you, inviting you in.

I love a big family style salad, one that everyone sticks their forks in, scooping up their favourites bits. 

The great thing about this is that you can mix and match a variety of salads on the table to your hearts content. Like this or this. Serve with a roasted chicken, cold meats and some lovely jersey royals. 

The salad below is one of those, big sharer, star of the meal type salads. Fab at a bbq, picnic or even as a take to work in a tupperware. Its stuffed full of goodness, gluten free and perfect for getting that bikini bod, without starving yourself.

Its bright and colourful but oh so good for you. 

For 6 people as part of a variety of dishes you will need: 


:: one small butternut squash, thinly sliced

:: 2 red onions, cut into wedges

:: 1 garlic clove

:: olive oil

:: salt/ pepper

:: thyme leaves

:: 400g puy lentils

:: mixed cherry tomatoes

:: 100g spinach leaves

// Take your butternut, onions and garlic and lay in a roasting tin

// Drizzle with olive oil, salt, pepper and a good sprinkling of thyme. 

// Roast in the oven for about 30- 40 minutes, until soft and tender but not burnt.

// Take your roasting dish out the oven and leave to cool.

// Once cooled, layer your spinach, sliced tomatoes and lentil in a shallow serving dish.

I lightly drizzled the salad in a tangy french dressing which complemented the bold sweet flavours of the onion and butternut.  I love to use Lucy's Dressings as they are inspired by the family lifestyle and where originally made in Lucy's family kitchen. Each dressing uses great, local ingredients which means its miles better than any supermarket dressing. I also think the design of the bottle is really stylish and simple. 

I love the jewel like colours of the golden orange squash and the vibrant green spinach, such a beautiful salad taking pride of the table.
