:: Easy Peasy Japaneasy Teriyaki Beef Bowls ::

 You guys, what do you think of the new design hey? I love it so much. The incredibly talented Bobbi from Ready to Blog has spent the last good few months patiently helping me design and then redesign but we finally came up with this and its fab. There a few final details to be added but on the whole its finished. I have also got my own URL woooooo-
For my first post in quiiiite a while, I thought I would ease myself in with this insanely easy and yummy Japanese style dish.

Slices of juicy steak smothered in a sticky teriyaki sauce topped off with cucumber noodles and spring onions on a bed of rice. It is the perfect quick mid week supper.

Ingredients for two

:: 1tsp coconut oil
:: one small onion sliced
:: two free range sirloin steaks, sliced
:: four tbsps. teriyaki sauce - I used Itsu
:: one finely chopped garlic clove
:: one inch fresh ginger finely chopped
:: one tsp. water
:: half cucumber either julliened or using a spirrelli make some noodles
:: two spring onions sliced
:: rice

First things first, put your rice on to cook. I am not going to lie, I am not a fan of cooking rice, so I always go for the boil in the bag and works a treat.

In a wok, add the coconut oil and then the onions and leave to soften.

Add the steak slices and quickly brown for a minute or two.

In a separate bowl mix up the teriyaki sauce, water, ginger and garlic and then pour over the steak and onions. Leave to simmer slightly and then take out, put to one side.

Once your rice is cooked, plate up, rice first. Then spoon over the sticky salty steak slices.

Top with the noodles and spring onions and hey presto supper is served.

It takes less that 20 minutes to cook and prepare, its healthy and its so delicious. What more could you want from a simple supper?
